My dad quick claimed his 50% to me. I own the other 50%. Recently, he filed a quit claim which adds him back on to the deed and also includes his wife. I recently received a notice from his attorney stating his wants me to give him back his 50% and that I would become the beneficiary of the 50% once he passes.
What will secure me that I will become 100% owner once he passes? What are my options for full recovery of the property if I decide to give him back his 50%? What should I doe besides getting a lawyer?

i can understand it is a sensitive matter involving your parents. it is good to see that though you are suspecting some thing but you are feeling your responsibility also without simply ignoring the matter.
i don't know why he want back the share already handed over to you. if you suspect any unwanted motive behind this then i would advice rather not to sign a quit claim deed on your part.
as signing a deed would automatically remove your name from the property and if there is any problem afterwards then you may suffer. instead i would suggest you talk to your father and try to know why he wants it back and try to convince him saying that it may cause you trouble after him as there would none to take care of you.
if you decide to give him the property then do it only if your name is included in the deed or your name is added to the title.
always take the help of your attorney before you decide some thing as this is a critical issue.
don't get frightened as still you have the power for the 50%. keep your cool and take measured steps consulting your attorney.

I don't think it would be wise to sign the deed and hand him over your portion. It may force you in trouble after his death.
If he really want you to own the property after him then suggest him to include your name the title.
Try to convince him about the insecurity that you may face once you sign the deed as after his death there will be no body to take care of you.

Welcome to the forum. If you pay someone's property tax that doesn't entitles that the owner has to quitclaim to the property to you but if he wishes, he can quitclaim the property to you.
