i understand the idea of the quit claim deed, but could someone add someone to the deed even thou the person is not in the mortgage or do they both have to be int he mortgage

Welcome to Mortgagefit,
It is not at all required that person who is on deed has to be on the mortgage.These are two completely different aspects.Even a child can be on the deed but he can not be on the mortgage.and still child does have the right of ownership.
