My husband and I want to buy a house in another state but we are being told by lenders that we need to show income within the state of the house being purchased. Is there anyway around this other than getting a mortgage for a second home? We are using his VA eligibility. Also, the sellers will not consider a lease-purchase offer.

Most of the lenders will want you to show some kind of income in the state where the home is located. It will be better if you can show some kind of income there.
