My mortgage was signed only be me and 1 witness, who is also the notary. However, the notary did not imprint the seal, the mortgage was recorded. I believe its invalid because it needs the seal to be recorded, and I thought that mortgages needed two witnesses.

I believe you only need one witness, however, there may be different rules in different states. Sounds like the lack of a notary seal is a clerical error. It's not like they lied and are not a notary. If your lender accepted the documents that mortgage is indeed binding.
I will say only one witness is enough for mortgage signature requirements. I do not think that there will be rule change for state to state.
