can a mortgage company change the locks on a property if the property was defaulted on by the payor (the ex- husband) but the deed was quitclaimed 20 years ago to the spouse?

As the property is in the name of the spouse, the lender will not be able to change the locks without informing the owner of the property. However, if the dues are not paid on time, the lender will have the rights to foreclose the property.
