My mother has given me power of attorney and she is now on a ventilator at my home. She has a home with a mortgage payment on it. My question is she does not have a will. Can I do a quickclaim deed and transfer the house into my name since I have power of attorney to keep it from going through probate court?

As you have the power of attorney on your mother's behalf, you'll be able to sign a quitclaim deed and transfer the property in your name. In that case, you won't have to go through the probate court.
