Would it be better to add my name to the deed of my mothers property or transfer the deed?...I am concerned that my mother may mortgage her property and home and loose it because of her alcoholism. What would be the best way to ensure that this does not happen. She has already agreed to sign it over to me to avoid this from happening.

You can request your mother to sign a quitclaim deed in your name. This will transfer the property to you.
