I have a home that is paid in full and I would like to give it to someone as a gift, do I need to fill out a quick claim deed form? Or do I need to do something else.. should I have an attorny present if so what kind.

In order to transfer the ownership of the property, you will have to sign the quit claim deed. As the property is paid in full, you can go ahead and sign a warranty deed in order to transfer the property. It is better to take the help of an attorney while you transfer the property. Once the deed is filled out, you need to notarize and record it at the county recorder's office.
