We want to quick claim a deed to a 2nd house we bought to my parents so that they will be on the title and can then claim homestead exemptions in the state of florida. This 2nd house is mortgaged and we will continue to assume the mortgage payments. I want to protect the home though from ever being taken away in case my parents end up in nursing homes. Can we use quick claim deed to 'add' them to the title (in addition to us) and thereby prevent Medicaid from taking the house in the event they go to nursing homes?

You can definitely use a quitclaim deed to add your name to the property deed along with your parents. However, as you will be on the title of the property, there are chances that your parents will not get the facility of Medicaid. As you will be on the title, Medicaid will not be able to do an estate recovery.

If a couple is on medicaid and and both are in a nursing facility permanetly and still have a house can it be quick claim deeded to a family member and not mess up their medicaid.

As the couple is on Medicaid now, I don't think it will be a good idea to quitclaim deed the property to a family member. It may affect the Medicaid.
