I was wondering if i added my fiance to my deed would that make him part owner even if he's not listed on my mortgage loan?
name(s) mentioned on deed is/are the owner(s) of property
precisely, being added to title is what constitutes becoming an owner of the property.

Yes, but it'd be safer for your fiance if the two of you refinanced the mortgage together. It'd be a major hassle for your fiance if the two of you were on Title, but not the mortgage, and you broke up.
