I want to know if someone quit claims there property before there death but leaves the property to you if there anything that can be done

No. If one transfers a property interest before one dies, then that property interest is not part of one's estate when one dies. Since it is not part of the estate, it will not get tranferred by will.
If they quit claim the property to you before their death then it is yours.
