Can I record the quick claim deed that was signed by my dad before he died before I file the probate claim?

As your father is deceased, I don't think you would be able to record the quit claim deed now. It won't be considered as a valid deed. Nevertheless, I would suggest you to contact your real estate attorney and take his opinion regarding this issue.
