is it legal for me to sign for a second mortgage after i have already signed a quit claim deed and it has been entered in to the court?

If you've transferred the property to someone else with the help of a quitclaim deed, I don't think you would be able to take a second mortgage on that property. The lender will want you to be on the property if you want to take a second mortgage.
