can i put several names/grantees on the quit claim?
of course you can put someone on property deed by using quit claim deed. but you have property ownership.

My husband's mother is in a nursing home and at 81 no longer wants to handle any financial matters. She has given him durable power of attorney to take care of selling her home in Arizona. Since her health is failing, my husband would like to settle this matter as quickly as possible. Would you recommend a quit claim to himself and then selling or adding himself along with his mother on the title? According the her will, he inherits the house upon her death.

No, it'd inhibit you from selling it quickly. The Durable Power of Attorney is enough - it's all he needs.
