What are the pros and cons of having a spouse sign a quitclaim deed? If the relationship ends up in divorce, well signing the deed not be consideration a joint property leaving out the spouse any claim to the property.

signing a quitclaim deed transfers the property from one person to another. your spouse can sign a quitclaim deed and give away his/her interest in the property. however, that does not mean that the mortgage of the property is also transferred. to transfer the mortgage, you will have to go either for the process of novation or for refinancing.
if your spouse has already signed a quitclaim deed before divorce, then he/she will have no interest in the property. not even in a community property state.

Does not signing a quitclaim deed affect closing of escrow.........

I do not think signing a quitclaim will affect escrow closing. If you do not want your spouse's name on the deed, you can ask him/her to sign the deed.
