My uncle wants me to help him draft a letter. He split up with his wife and the wife told him she is not interested in collecting the life insurance or 401k should he pass...if he removes her as a beneficiary does he still need to have a letter notarized saying the wife quitclaims those interests or what would he have to do?

If his wife is not interested to claim fund of you uncles life insurance or 401K. Then your uncle can sign quite claim deed to remove her name. After he pass his nearest relative like Daughter, Wife etc. Will be the owner of property as benificialry.

Regarding your 401K, you are trying to change a beneficiary. Federal law designates your spouse as your automatic beneficiary. She would have to agree to waive her rights as beneficiary on a waiver that most likely requires witnessing and/or notarizing.
