Do I have to add my spouse to my title if I am applying for a mortgage in my name? I live in a community property state.

If you are living in community property state then by default property is owned by the husband & wife and responsibility to pay-off the mortgage lies with both of them.
So you are advisable to add your spouse's name to the title.
