My wife and I would like to have the mortgage note on our homestead in my name only and use only my financials for the approval. All other documents should contain her name, but, not the mortgage note. Can we do this in Texas legally?

You can definitely use your income to qualify for a loan under your name. If you have sufficient income and crdit score there shouldn't be any problem for you to qualify. But as it's a community property, the lender may require your wife to sign over her property-interest to you so the loan can be financed only in your name.
