I have a free and clear paid property with a home on it, and want to sign it over to my son, how do I do this. I live in Texas

You will have to sign a quit claim deed and transfer the property to your son. Once you do so, your son will have to notarize and record the deed at the county recorder's office. Once he does so, he would become the owner of the property.
